    What is specialty coffee?

    We do cup tasting for each batch of coffee beans, and give them scores based many factors like the cleaniess, sweetness, after taste, body, acidity, etc. Each coffee bean would have their own scores, and generally those scored more than 80/100 we could call them specialty coffee bean. It is important to maintain the consistency of coffee bean and we use such methology to complete quality checks and grading for each coffee batch.

    During the cup tasting session, each coffee bean would be grinded and brewed with 95 ºC hot water. The coffee tasters would smell the coffee beans first, then after being steeped in hot water for about 4mins and cooled down a bit, the coffee creama would be cleared out and coffee tasters would start to sip each cup of coffee.

    There are many flavors relating to each coffee bean, and we use many description words to describe the flavors that we experience, e.g. apple acidity, fruitful flavor, caramel after taste, etc. This would give a guideline of how the coffee is tasted like.
